- Drain the can of Chiles to a blender or food processor. Purée until smooth, scrape to some container, and place aside. Put to boil on a teakettle of water, and keep warm water.

- Make the onions, if utilizing: In a bowl, mix lime juice, onions, and a sprinkling of salt. Allow softening at room temperature till sour and crunchy, about half an hour. Drain and rinse with cold water. Squeeze dry and refrigerate until ready to serve. Before serving, if desired, chop.
